Cajun Chicken Alfredo Pasta
I have been craving spicy foods lately, so last night, I decided to try a new Cajun recipe, and Pinterest popped out this gem! I really enjoyed this Cajun Chicken Alfredo Pasta recipe! It was easy overall, which is key for me, and had good flavor. I also really liked that this recipe allows for customization without destroying it. When I think of a Cajun pasta, I think of something similar to the Cajun Shrimp and Chicken Pasta from TGIFriday’s, so adding bell peppers was a must. I decided not only to add a red bell pepper but also a green bell pepper and an onion. I had a hard…

Chicken Noodle No Soup
Have you ever thought to yourself I would love the comfort of chicken noodle soup, but you’re just not in the soup mood? Well, I have the perfect thing for you, Creamy Chicken Noodle Skillet, or as I loving call it Chicken Noodle No Soup! (Visions of Seinfeld “No soup for you!” come to mind.) It has all the flavors and comfort of a chicken noodle soup but is a creamy pasta instead. This is perfect if you’re like me and can’t wrap your head around a soup for dinner when it’s a hot summer night. Not the mention, this recipe is quick and easy! The first thing I…

During the COVID-19 pandemic, many people are starting to flex their baking muscles. Stuck at home during the day, I learned of black bean brownies from a day time talk show, Kelly and Ryan Live. Ryan Seacrest was showing off these brownies as an alternative to the excessive amounts of comfort foods that he was consuming during this trying time. Facebook must have known what I was thinking because a suggested post showed up that day with a recipe for these brownies, creepy but I’ll take it. While I don’t know how healthy these brownies actually are, they are definitely packed with protein which is what lead me to this…

Chicken P’ Somethin’
Last night’s dinner recipe was “Easy Chicken Piccata”, while it was a fairly easy recipe to follow, for me it was the flavor that was a fail. I started preparing by getting the ingredients measured out. I’ve learned through past experience that if I don’t start this way things go sideways, FAST! The problem this time, the recipe listed the measurement total that would then be dived out later in the recipe. This was difficult as things started cooking quickly, negating the easy part of the recipe. The recipe then starts by heating oil in a pan, dredging the chicken in flour, and cooking it. Heating the oil went well,…
