Cajun Chicken Alfredo Pasta

I have been craving spicy foods lately, so last night, I decided to try a new Cajun recipe, and Pinterest popped out this gem! I really enjoyed this Cajun Chicken Alfredo Pasta recipe! It was easy overall, which is key for me, and had good flavor. I also really liked that this recipe allows for customization without destroying it. 

When I think of a Cajun pasta, I think of something similar to the Cajun Shrimp and Chicken Pasta from TGIFriday’s, so adding bell peppers was a must. I decided not only to add a red bell pepper but also a green bell pepper and an onion. I had a hard time finding cajun seasoning at the grocery store, so part of my preparation was making my own. I mixed paprika, salt, garlic powder, black pepper, white pepper, onion powder, oregano, cayenne, and thyme. I think I made this WAY more difficult than it had to be and made a huge mess looking like the spices had exploded all over my cutting board. I strongly suggest not having to do this step if at all possible.

After I finished my spice fiasco, I started cooking. I thought I was a rock star by cooking the pasta and sautéing the vegetable and cooking the chicken all at the same time; however, the water took forever to boil, so my timing was a little off. I recommend getting the water boiling first then moving forward with the recipe. After the vegetables and chicken are cooked, you add the cream cheese and the milk, stirring until the cream cheese melts. Then you add in the cooked pasta, parmesan cheese, salt, and pepper. That’s it! 

I think this was a very simple recipe except for the spice problem I created for myself, but don’t worry, I now have PLENTY of Cajun seasoning as a result of my mixing process. I think my only change for next time would be to add more seasoning though, it had great flavor, but I think it could use just a little more kick. Overall, this one goes down in the books as a success!
